Elkhorn, NE: Summer Comfort

A Little rain didn’t deter people from enjoying the Big Green Q food truck today. With homemade tater tots (yes, that’s a thing), bacon wrapped meatloaf sandwiches, and mac and cheese with locally sourced cheese, people sought out comfort food on this soggy summer day.

Our Maintenance Director, Dale Terry, saw the line of umbrellas and didn’t miss a beat. Even with a steady drizzle he was out the door with a tent to put up for people to stand under. With this added comfort, more people were encouraged to visit the food truck.

Between the steady rain and delicious comfort food we are feeling pretty cozy at Brookestone Meadows on this beautiful summer day.
